Late-Night Chocolate Cravings

But not in the way you think! Okay, so maybe it was in the way you think. Sunday night, I was actually craving chocolate. Big shock, I know!

In other news, the Earth revolves around the sun.


Anyway, back to my chocolate craving. I really wished I could whip up something quickly that was healthy (or at least not unhealthy) and delicious, but, without wanting to make an entire production out of it, I was at a loss. Then, thanks to the magic of Facebook, a friend posted a link to a two-ingredient chocolate mousse recipe. The ingredients were bittersweet chocolate (which contains sugar) and water. Really???? I wondered if this could work with unsweetened chocolate and coconut (or palm) sugar. I thought that I should try this recipe sometime this week. I thought that for about five minutes before I decided to do the math to figure out how much unsweetened chocolate and how much coconut sugar I would need. I did the math and raided the pantry. Serendipity prevailed because I had the exact amount of both unsweetened chocolate and coconut sugar I needed. I kid you not--the exact amount. It's like I was meant to make it right then and there. What else was I supposed to do? Clearly this was a sign from a power greater than I. I had to see if it would work. I got to chopping the chocolate and putting the ingredients together. Lo and behold, a miracle happened. In about 10 minutes, I had vegan, cane sugar-free, three-ingredient chocolate mousse. By the way, after making the miracle mousse, I went back to Facebook to thank my friend, and the post was gone. I'm SERIOUS!!!

Be sure to get it because, as with all the weekly recipes, it will only be up for a week. It will then vanish forever...or until I write a cookbook!
